The difference in the protein content is due to genetic variation among these animal species. Whey protein content was highest in sheep milk (0.74%) while the lowest content was found in cow milk (0.53%). NCN content was higher in sheep milk (1.31%) and lower in camel (0.91%) and goat milk (0.90%).
The whey protein in sheep milk is very digestible. Sheep milk contains 3 times more of this type of protein than goat's or cow's milk which also contributes to better digestibility.
