Onion and garlic are peeled by the Flame peeling method.
It is the process of exposure of fruit or vegetables to intense heat to char the peel and facilitate its rapid removal by a powerful stream of water.
It is used in onions, garlic and Brinjal. The peeler consists of a conveyor belt that carries and rotates food through a furnace heated to more than 1000 degrees Celcius. The outer layer and root hairs of onion are burnt off and charred skin is removed manually.
