Temperature for LTLT pasteurization

A.
61° - 63°C
Answer
B.
42° - 49°C
C.
50° - 55°C
D.
40° - 45°C

Answer: Option A

Solution

Answer: Option A
Solution:
The temperature for LTLT pasteurization is 61° - 63°C.
Pasteurization is a process of food preservation in which packaged and non-packaged foods are treated with mild heat, usually to less than 100°C (212°F), to eliminate pathogens and extend shelf life.
The LTST (Low Temperature Long Time) method depends on a mechanism in which low heat and low pressure are utilized to pasteurize a fluid milk product. In this process, milk is dispersed in the form of droplets into a process chamber and heated for 0.02 s at or below pasteurization temperatures (61° - 63°C).
